Recipe of Week: Brains on the Half-Skull

Just so you know, we LOVE Halloween. It is one of our favorite holidays. Throughout the month of October, we’ll be sharing some of our spooky recipes. And, starting on Saturday, October 10 and every Saturday ’til the big day, 2 Kids TV will be dedicated to our best Halloween treats.

Don’t let the name of this deliciously healthy snack scare you. It’s really just tomatoes and cottage cheese–but it fits in perfectly on the Halloween buffet. Sophia absolutely loves this savory snack and we hope you will too!

Brains on the Half-Skull:
1 dozen or so Grape Tomatoes
1 Cup Cottage Cheese
1/2 T. Fresh Basil, finely chopped (optional)
Salt
Pepper

Cut the Grape Tomatoes in half lengthwise. Next, take a spoon and scoop out the inside of the tomato, putting into a bowl. Add the Cottage Cheese to the tomato insides and mix together. If you choose to add Fresh Basil, mix it in with the cottage cheese at this point and the Salt and Pepper to taste. Arrange all of the emptied tomato halves onto the serving plate and then spoon the cottage cheese into each half. For final touches add a bit more salt and pepper and Whaaa Haa Haaa Haaa…you have Cottage Cheese Brains on the Tomato Half-Skulls :D
