Happy St. Patrick’s Day everyone! You know we love to celebrate the holidays, and this one is no exception. Last year we invented our own Tropical Shamrock Smoothies, but this year, we thought we’d try something straight from Irish tradition. We choose Boxty, an Irish Potato cake. It’s pretty similar to our favorite Polish Potato Pancakes, so we were sure we’d like ‘em. We were right
