Two Kids Cooking TV: Photon Potion

This week the kids and I are sharing a delicious and science-ily, spooky Halloween beverage that we call Photon Potion.  We like the potion, but the beakers we serve it in have become some of our favorite glasses around the house ever since we got them :D

Anyway, this show is our final one for the 2011 Halloween season, but this and all of our Halloween shows will live on so you can stop by and watch them whenever you need a little Halloween in your life!

Kids Cooking Recipe: Pumpkin Pie Pudding

Thanksgiving is just around the corner and we couldn’t wait to share one of the recipes we’ll be demonstrating on our Thanksgiving episodes. Alex loves this one and we hope you do too :D

Kids Cooking Recipe: Pumpkin Pie Pudding

Kids Cooking Recipe: Pumpkin Pie Pudding

Ingredients

  • 1/2 cup brown sugar sugar
  • 1 15oz can pumpkin (un-spiced)
  • 4 Tablespoons cornstarch
  • 1/4 teaspoons salt
  • 1 1/2 cups whole milk
  • 1 well-beaten egg
  • 2 Tablespoons butter
  • 1 teaspoons vanilla
  • 1/2 teaspoons cinnamon
  • 1/4 teaspoons ground ginger
  • 1/8 teaspoons allspice
  • 1/8 teaspoons ground nutmeg

Instructions

  • Mix all ingredients together in a pot.
  • Stir together over medium high-heat.
  • Once the mixture starts bubbling, let it simmer for 3 minutes.
  • Remove from heat and transfer to one large bowl, or multiple small bowls.
  • Refrigerate until chilled.
  • Serve topped with whip cream.

Healthy Eating Helpers for Kids

As parents, we all want what’s best for our children and that is especially true when it comes to their health. A key element of being healthy is the food you eat. With kids and all of the not-so-healthy food messages they are exposed to, it’s important to reinforce positive messages about food choices early.  There are lots of resources out there to assist parents with this healthy eating education and here are a couple of our favorites.

 

Today I Ate A Rainbow Kit

The ‘Today I Ate a Rainbow’ Kit allows kids to interactively and colorfully see what fruits and vegetables they’ve eaten for the day.  By working toward their daily goal of eating a food from each color of the rainbow, the kids learn the healthy goal of eating a rainbow. The kit is also helpful to remind Mom and Dad to keep lots of rainbow foods on hand!

I Can Eat A Rainbow

For the youngest eaters in the family, the ‘I can eat a Rainbow’ book is colorful and fun way to start learning about healthy eating.  Similar to the ‘Today I Ate a Rainbow’ kit, it teaches the goal of eating food from every color of the rainbow.

 

 

 

Healthy Kids Plate

The Healthy Kids plate emphasizes the recommendation that half our plates be fruits and vegetables and it’s divided to ensure proper portions of each food group–and for those picky eaters who hate their food touching. It’s dishwasher safe, BPA Free, Lead Free and 100% Melamine. The plate not only teaches children how to eat more healthfully, but it also reminds Mom’s and Dad’s to give their kids more fruits and vegetables.

 

Healthy Kids Dinner Set

This set emphasizes the same benefits as the plate alone, but in addition, includes a Bowl measuring one full cup–this means you can fill it with one cup of veggies and know your kids are meeting recommendations for vegetable consumption. It also includes a one cup glass to encourage drinking water!

 

I know that as the mom here at the two kids household, I’m always looking for creative ways to reinforce healthy eating habits. These fun tools will help you and your kids get an early start at learning how to have a healthy diet. We hope you like them as much as Alex, Sophia and I do.

Kids Cooking Recipe: Roasted Pumpkin Seeds

One of our friends asked for this recipe, so we’re posting it…enjoy!

Kids Cooking Recipe: Roasted Pumpkin Seeds

Kids Cooking Recipe: Roasted Pumpkin Seeds

Ingredients

  • Pumpkin Seeds from freshly carved pumpkins
  • Olive or Vegetable Oil
  • Salt
  • Adobo Seasoning (optional)

Instructions

  • Once you've separated your pumpkin seeds from the rest of the goo...place them in a bowl and fill it with water to cover them. Add salt to the water, enough to flavor the water, but not over-powering. Place the bowl in the fridge over-night.
  • The next day, drain the seeds and dry them off with a paper-towel. They don't have to be super dry, but not soaking either.
  • Preheat your oven to 350 degrees. Place the seeds on a cookie sheet and drizzle enough oil on them to cover them. Season them with Salt, or whatever seasoning flavor you prefer...we like adobo seasoning, but plain old salt is delicious too. Make sure you seeds are in an even layer...if you have too many seeds for one pan, roast your seeds on multiple pans or in batches.
  • Total roasting time is about 30 minutes, depending on the density of seeds on the pan. Just make sure to check them every 10 minutes until they are browned (to whatever shade you prefer...we like light to medium brown).
  • Enjoy!

Two Kids Cooking TV: Zombie Treats (aka Fresh Mozzarella filled Ravioli)

As the title to this post indicates, Zombie Treats are really Fresh Mozzarella filled Ravioli. Making fresh pasta with the kids is fun and tasty and the kids and I show you just how easy it is.

Kids and Food: Repetitive Trying for ‘Picky’ Eaters

“I don’t like that!”

I’ve heard it too many times. My response is always, “take one bite, you have to try it.” Then I go on to explain that as you grow, your tastes change and you might like it this time, even if you didn’t last time. I’m not sure they listen to the part after ‘you have to try it,’ but I keep on restating it every time I hear an ‘I don’t like it.’

The thing is, now that Alex is nearly 13, I’m starting to see the results of my repetition. He’s actually starting to say things like, “Wow, this is good.” And then continue eating it and ask for more! Things like corn chowder and Swiss cheese, even sardines (which this mom loves)…Big smile for mom :D OK, I am still working on a some vegetables, but this is a great start.


I admit it though, I tend to be a pleaser. By that I mean if I’m making something, like say spaghetti, and I know one of the kids might not like part of the meal, say the marinara, I’ll make an extra veggie to make sure they get all their veggies for the day. I still make them taste the food that offends them, but I do make the extra food. I’m sure this probably isn’t what I should be doing, but I do it.

Family Cooking: How Often Does Your Family Do Special Food Nights?

Special family food nights for us range from a picnic dinner at the pool, to movie nights, to eating on the ‘fancy’ plates by candlelight. The kids and I will pick a night–during the school year, it’s usually a Friday–and then pick a menu. It’s my job to make sure we have all the ingredients and then on ‘the day’ we get home and start prepping food and cooking.

The ‘prepping food and cooking’ isn’t just a precursor to our family nights though, it’s part of them. Sometimes it’s the most fun part. While we prepare our meal together we talk, goof around, get excited about the presentation and taste—lots of tasting most of the time. Many of the ‘remember when’s’ we talk about later come from the time we spend together preparing for the actual event. Don’t they say life is about the journey, not the destination…


I have to admit though, lately we have not been doing our special family food nights. It’s not because we’ve been overwhelmingly busy with school activities either, I’ve just been working too much on other things. It’s time to refocus. The kids and I are going to work on having a special family food night at a minimum of one night a month, ideally two (the kids are only with me every other week, so every week they’re with me, we’ll try to do a special family food night). I think this might be something we need accountability for too, just like the veggie variety goal. We’ll be facebooking and tweeting how successful we are :D
