Corn. We eat a lot of corn. At every meal we have a fruit and a vegetable. I try to vary the offerings, but more times than not, the veggie is corn. I am coming to a cross-roads with corn, however; I’m getting sick of it. I’m going to have to make an agreement with myself that I will not serve corn more than two days a week.
I can’t wait to start eating broccoli and asparagus and beets more often. And let’s not forget carrots and green beans or cauliflower. The kids like most of these veggie too, so it’s not all their fault. I’m the lazy one who defaults to a known safe vegetable so frequently. I think to help keep me honest, I’ll start facebooking our nightly veggie and fruit options. I’ll even try and do it on ‘non-kid’ weeks when Alex and Soph are at their dad’s–just to make sure I get my veggies too 😀
