Christmas morning can be a bit crazy with gift opening, overtired kids and exhausted parents, but, we can be sure that at some point hunger will come around. That means breakfast and at the two kids household, pancakes area a favorite (for the kids, not the mom). Although I am not a great pancake maker, this recipe is one that the kids and I make and they like; plus, the batter can be made the night before, just in case you anticipate a busy morning ;D

Kids Cooking Recipe: Two Kids Pancakes
- 2 Cups Sifted All-Purpose Flour
- 2 Tsp Baking Powder
- 1 Tsp Salt
- 2 Tbsp Sugar
- 1 Egg
- 1 1/2 Cups Milk
- 3 Tbsp Vegetable Oil
- Chocolate Chips
- Sift the flour, baking powder and salt. In a separate bowl, whisk the sugar, egg, milk and oil. Combine the dry ingredients and the liquid ingredients. Do not over mix.
- You can refrigerate the batter overnight if you want. If not, you can cook them up right away.
- Heat the griddle or pan, spray it with oil or add some butter. Pour some batter onto the griddle. if you want to add any add-ins, this is when you should do it. When the pancake starts to bubble, it's time to flip. To test for done-ness, press the pancake a bit in the middle, if it springs back, it's ready.
