Kids Cooking Recipe: Garlic Cilantro Mayo

This tasty condiment recipe is good to eat and prepare. There is chopping, measuring, pouring and stirring–plenty of fun for kids and parents alike.

Once you’ve got everything mixed up, it goes great with Chicken, Turkey or Fish.

Kids Cooking Recipe: Garlic Cilantro Mayo

Ingredients

  • 3/4 Cup Mayo
  • 3 Tablespoons Fresh Cilantro, Chopped
  • 2 Tablespoon Fresh Lemon Juice
  • 1 Clove Garlic, Pressed
  • 2 tsp lemon zest
  • Salt and Pepper to taste

Instructions

  • Chop the fresh cilantro
  • Zest the lemon
  • Mix all the ingredients together
  • Cover and let sit for at least an hour before serving

Kids Cooking Recipe: Lemon Cilantro Roasted Chicken

This recipe may seem less than kid-friendly, BUT, it’s great for kids of all ages. Lemons need cutting which is good for older kids; Cilantro needs rinsing, drying and tearing…good for younger kids; and garlic needs peeling and crushing which is fun for kids of all ages :D   The salt, garlic and olive oil rub is something younger kids can do too.

Sooo, don’t think the kiddies can’t get in on roasting a chicken because they certainly can!  We hope you like the recipe. This is one of Alex and Soph’s favorite ways to have a roasted chicken.

Kids Cooking Recipe: Lemon Cilantro Roasted Chicken

Kids Cooking Recipe: Lemon Cilantro Roasted Chicken

Ingredients

  • 1 Roaster Chicken
  • 2 Lemons
  • Fresh Cilantro
  • 6 Cloves Fresh Garlic
  • 1 Tablespoon Olive Oil
  • 1 tsp Kosher Salt
  • salt
  • Pepper

Instructions

  • Rinse and dry the roaster chicken
  • Slice the 2 Lemons into 4 slices each
  • Tear a handful of the cilantro from the bunch, rinse it and dry it.
  • Peel the garlic cloves and crush 5 of them with a knife or the bottom of a bowl/drinking glass (this is best if younger kids are doing the crushing)
  • Mix the Olive Oil, Kosher Salt and 1 of the garlic cloves, pressed.
  • Lightly salt and pepper the inside cavity of the roaster chicken
  • Insert one of the slice lemons, the cilantro and the remaining garlic into the cavity of the chicken. Make sure to get the garlic and cilantro touching some of the the cavity walls. The lemon's juices will release and soak into the meat, carrying the garlic and cilantro flavors with them.
  • Rub the outside of the chicken with the olive oil mixture.
  • Place the remaining 4 lemon slices on the bottom of a baking pan and place the chicken on top.
  • Tuck the wings up and behind the chicken and secure the legs with baking twine.
  • Bake at 350 degrees until the chicken reaches an internal temperature of 165 degrees.
  • Let it sit for 5 to 10 minutes before serving.
  • You could make a simple pan gravy from the drippings that would be super tasty over the meat or on potatoes!

Kids Cooking Recipe: Black Bean Corn Salsa Salad

This recipe is great for older kids working on knife skills. Younger kids can measure out the olive oil, lemon juice and spices. Other skills that will be used when whipping up this delicious salad include can opening, rinsing and stirring.

You can serve this salad as is, or add some leftover grilled or broiled chicken. We serve it in soft taco shells with avocado and a drizzle of sour cream.

Kids Cooking Recipe: Black Bean Corn Salsa Salad

Ingredients

  • 1 1/2 cups diced tomatoes
  • 1/4 to 1/2 cup chopped onions (green onions would work, too)
  • 2 cloves garlic, minced
  • 1 can back beans, rinsed
  • 3/4 cup corn (frozen or canned)
  • 1/4 to 1/2 cup fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1 Tablespoon lemon juice
  • 4 Tablespoons Olive Oil
  • 1/4 tsp salt
  • 1/8 tsp pepper

Instructions

  • Mix all of the ingredients together in a bowl and toss. Refrigerate for about an hour before serving.

Kids Cooking Recipe: Hummus and Pita Chips

Kids Cooking Recipe: Hummus and Pita Chips

Ingredients

  • 4 Cloves Roasted Garlic
  • 3 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon lemon juice
  • 1 Teaspoon Cumin
  • 1 Can Garbanzo Beans(Chick Peas)
  • 1 Pack of Garlicy Pita Bread
  • Sea salt.

Instructions

  • Cut each piece of pita bread and cut in half and then into quarters. Then peel them in half. Brush them with olive oil and then sprinkle with sea salt. Bake 350 degrees for 6 to 8 minutes.
  • Add the rest of the ingredients to a food processor and blend until spoon. Serve!

Kid-Friendly Valentine Recipes from Around the Web

It’s February, and that means Valentines day…another candy-filled holiday for the kids. BUT, despite the pre-made, packaged treats out there, there are still lots of sweets and non-sweets with a love-oriented theme that you can make with your kids to celebrate the holiday of love.

Now, I’d like to say that we are brimming with unique and creative Valentine themed recipes for you, but we really only have the one 2 Kids Recipe–Banana Berry Valentine Trifle (which you can see we’ve kidified for you to make the preparation super easy for the whole family).

Despite our laziness in developing creative love-themed delicacies, there are still a few out there from others that we admire and are now on our ‘Try It!’ list. Here they are….

Healthy Valentines Day Recipe Double Chocolate Brownie with Natural Pink Frosting
If you’re looking for a healthier version of a chocolate Valentines treat, This recipe from Food with Kid Appeal is the place for you.  We haven’t tried this one yet, but we will…yes we well ;D

Calzone Recipe for Kids
We love pizza, and these heart shaped Calezones with pizza filling are right up our alley.  This recipes has you making dough…which is cool if you’re inspired by dough making, but if you are not, you could use a refrigerated dough and cut it into a heart.  Either way, these are super cute for a kid-friendly, family Valentine dinner.

Valentines Day Cake Balls
So, we’ve never actually made cake balls…YET. My mom says we must. She says they’re great for making with kids and delicious for those who are inclined toward sugary awesomeness.  Mommy’s Kitchen always has great recipes, so when we finally take the cake ball plunge, these will be the instructions we follow.

Whatever your inclination, chocolatey, cake-alicious or heart-shaped savorey…any of these recipes would add to a perfect family Valentine meal.  Alex and Soph will be at their Dad’s on ‘the day’…but I think I feel a fancy ‘Saturday-before-the-holiday-dinner’ coming on :D

Recipe Kidification: Banana Berry Valentine Trifle

Today we’re introducing a new concept here on Two Kids Cooking. It’s called ‘Kidification’. So what does ‘Kidification’ mean? Well, it means breaking down a recipe into techniques and tasks and coding them by age group so they’re super easy for kids to make!

Why, Kid-ify?

Because then, when the kids help with the recipe, they’ll instantly know, by color, which parts are best for them to help with. And, it helps adults by breaking the recipe down and providing suggestions when cooking it with the kiddies.

You’ll see we start with a chart that breaks down each of the Techniques and/or Tasks that the recipe involves. It also indicates the minimum age level recommended for the task. You’ll see that Yellow indicates kids 4 and up can do the task. Age 7 and older can do green tasks; 10 and older blue and the orange task are for 13 and older. If the task has a star (★), then it requires supervision as indicated for that age range. Some tasks can be done with varying level of supervision at different age levels, and that is indicated as well.

When you read through the instructions for the recipe, you’ll notice that each of the techniques/tasks for that instruction have been underlined and pulled out, as well as color coded.

We think if visually conveys which age groups can most easily cook the recipe while quickly showing what parts of the recipe are best for what age kids to help with.

Ingredients
1 Angel food cake (we used a store-bought one, but you could make your own)
4 cups of fresh strawberries
4 whole Bananas
Whipped Cream (we used store-bought, but you could make your own)

Custard
1/8 tsp salt
4 Tablespoons sugar
2 Tablespoons cornstarch
2 egg yolks, lightly beaten
2 cups whole milk
3/4 tsp vanilla extract
3/4 Tablespoon butter
1 banana, mashed

Custard Instructions

Assembly
Before compiling your trifle…

Once the custard has cooled, you’ll be ready to assemble!

Serve immediately and Enjoy!
