Kids Cooking Recipes: Yummy Yellow Foods

Food is not only delicious, healthy and fun to experiment with…..it is also bright and colorful! Every color in the rainbow and beyond can be found in fruits and vegetables.  The summer is upon us with lots of sunny days ahead.  Why not kick off those warm sun-shiny days with some bright yellow yummy recipes?

Here are a few of my favorite yellow foods that I would love to share with you.  Gather your friends and family together in the kitchen and get started!  Always have an adult along to help out!!

Yellow Summer Fruit Smoothie!
1 cup vanilla yogurt
1 cup milk….your preference (you may use coconut milk if you like coconut!)
1 cup orange-pineapple juice
1 banana cut into chunks
1 cup pineapple chunks
1 cup mango chunks (Trader Joe’s has pre-cut frozen mango pieces!)

Carefully cut your fruit into chunks (unless you choose to use canned fruit, which is fine!)
and put them into the blender.  Next add the yogurt, milk and juice and you are ready to blend.
After blending, pour into your most favorite summer drink glasses and garnish with some bright yellow pineapple chunks!

Sunny Yellow Lemon Bars!
¾ cup butter
2 cups all purpose flour
½ cup packed brown sugar
½ teaspoon salt
4 eggs
1 ½ cups granulated sugar
¾ cup lemon juice
⅓ cup all purpose flour
3 tablespoons powdered sugar

First prepare the shortbread crust:  Preheat oven to 350 degrees.  Carefully Cut butter into small chunks.  Process all ingredients together in a food processor until mixture forms small lumps.   Sprinkle mix into a 13 x 9 x 2 inch baking pan.  Press evenly onto bottom with a spatula.  Bake until golden, about 20 minutes.  While crust is baking, prepare yummy lemon filling :)  In a bowl, whisk together eggs and granulated sugar.  Add lemon juice and flour, stir together.  Pour the lemon mixture over the hot shortbread crust when it is done.  Reduce oven temperature to 300 degrees and put the bars into oven for about 30 minutes until set.  Cool completely in pan.  Cut into 24 bars and sprinkle with powdered sugar!

I certainly hope you enjoy making these yellow tasty treats!  There are so many more yellow fruits and vegetables, too.   Can you think of your favorite yellow veggie or fruit?  What is your favorite way to eat it?  A yellow fruit and veggie tray would be super and refreshing on a hot summer day and EASY!!  Add a tall glass of lemonade and your snack time is complete.

yellow cherry tomatoes
yellow carrots (yes, there are yellow carrots!)
sliced starfruit
golden pears
golden delicious apples
