Two Kids Cooking TV: Photon Potion

This week the kids and I are sharing a delicious and science-ily, spooky Halloween beverage that we call Photon Potion.  We like the potion, but the beakers we serve it in have become some of our favorite glasses around the house ever since we got them :D

Anyway, this show is our final one for the 2011 Halloween season, but this and all of our Halloween shows will live on so you can stop by and watch them whenever you need a little Halloween in your life!

Two Kids Cooking TV: Zombie Treats (aka Fresh Mozzarella filled Ravioli)

This week, for our month-long celebration of Halloween here over at Two Kids Cooking, Alex and Soph are sharing our recipe for Zombie Treats.

As the title to this post indicates, Zombie Treats are really Fresh Mozzarella filled Ravioli. Making fresh pasta with the kids is fun and tasty and the kids and I show you just how easy it is.

Two Kids Cooking TV: Martian Mallows from Birthday in a Box!

Today, Alex, Sophia demonstrate a recipe that we recently tried from one of our favorite Party Supply sites – Birthday in a Box! We posted and shared a link to it a couple of weeks ago, though, because we were so excited.

Martian Mallows,are super sweet and super cute white chocolate covered marshmallows all decorated up to look, well, alienish!  Aren’t they adorable? Ours don’t look quite as fancy as the one’s at the Birthday In a Box site, but they were fun to make and eat.

I suggested this on the post where we shared the recipe as well, but my one recommendation when making these is this: if you can, use chocolate specially designed for melting and candy making. Tempering chocolate is just not easy. If you can’t find pre-tempered chocolate, you’re probably going to have to add extra oil to your melted chocolate to get it to the right consistency. That’s what we had to do, but it turned out perfect.

Two Kids Cooking TV: Snackulas (aka Tomato Basil Crostini)

Happy Halloween Month Everyone! If you haven’t figured it out yet, we LOVE Halloween. This means that instead of the usual 2 shows per month, we’re doing 4 in October–and we’re all dressed up for all of ‘em :D

To start of our month-long festivities, we’re sharing our recipe for ‘Snackulas’ (half the fun of doing these themed shows is coming up with the fancy names for the recipes :D ). Snackulas are essentially Crostini with a fresh tomato basil topping. Honestly, of all our Halloween recipes this year–including the sweet ‘Photon Potion’–this was ALL of our favorites.

Two Kids Cooking TV: Orange Cream Smoothies

Every night before Alex and Soph head off to bed they MUST have a bed-time snack. Now, I wish I could say that these snacks are always nutritionally optimized, but I cannot. Most of the time bed-time snacks are ice cream or something sweet. This is why our Orange Cream Smoothie is a popular bed-time snack, it’s sweet and cold and ice cream like.  And, since it’s made from Orange Juice, Milk, Yogurt and Ice, it’s not too shabby on the nutrition side either. :D

On this week’s show, the kiddies share this healthy bed-time snack recipe that is quick, easy and it does taste orange creamsicle-ish–which in my opinion means tasty!

Orange Cream Smoothies

Prep Time: 5 minutes

Yield: 3

Serving Size: 1 cup

Ingredients

  • 8 to 10 ice cubes
  • 1/2 cup milk
  • 1 cup orange juice
  • 1/2 cup vanilla yogurt

Instructions

  • Put all of the ingredients into a blender and blend away!

Two Kids Cooking TV: Corn Chowder

Corn is Alex and Sophia’s favorite vegetable. We have it alot, but usually in a frozen form. This time of year, when it’s fresh and in abundance, we try to eat as much as we can…we even get a little sick of it after a time. So, to add some variety to this tasty fresh treat, we occasionally whip up some of our corn chowder.

This chowder is actually more of a soup, but it could be thickened up with some corn starch or flour…either way, Alex and I love it. Soph’s not a huge fan, but she does try it every time we make it. I think as she get’s older, she’ll come around to enjoying the deliciousness of it.

Here’s our recipe in case you want to try it on your own:

Two Kids Corn Chowder

Ingredients

  • 6 ears of sweet corn
  • 2 russet potatoes
  • 1/2 white onion
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1 14.5 oz can chicken broth
  • 1 14.5 oz can evaporated milk
  • 2 cups milk (we use skim, but whole would make creamer soup)
  • 1/2 stick of butter

Instructions

  • First, boil the ears of corn until they're done, 10 to 15 minutes. Then cut the kernels of of the cob and set aside in a bowl. I get the kids involved by having them remove the husks from the corn, but cutting the kernels off really is an older child or adult job. While the corn is boiling you can have one of the kids cut up the potatoes. Younger kids can help with this too, but I recommend using a kids knife (like the ones from Curious Chef). Alex cut up our potatoes and prepped the onion for Soph to chop with our chopper.
  • Once you have all the ingredients ready, it's time to start cooking! We melt a 1/2 stick of butter in our soup pot and then add the onions, letting them soften. Then, add all the rest of the ingredients, letting the kids take turns pouring in each item. Once everything is in the pot, let it simmer for about 15 minutes.

Two Kids Cooking TV: Strawberry & Lemon Mint Iced Tea

With record breaking heat and humidity all over the midwest this year–including our home state of Minnesota–staying cool has been a priority. Drinking lots of beverages is essential in the heat as well, and things like iced tea are perfect for keeping hydration levels adequate. Which is why this week Alex and Soph are sharing two iced tea recipes, Lemon Mint Iced Tea (from a recipe we found at AllRecipes.com), and Strawberry Iced Tea, A recipe of our very own that you can find below.

Two Kids Cooking TV: Strawberry Iced Tea
Recipe Type: Beverage
Author: Two Kis Cooking
Prep time: 5 mins
Cook time: 30 mins
Total time: 35 mins
Serves: 4
Ingredients
  • 1 quart water
  • 3/4 cup white sugar
  • 6 regular-sized tea bag
  • 3/4 cup strawberry juice (we ran fresh strawberry’s through the food processor and then strained them)
Instructions
  1. Bring the water to a boil and then remove from heat. Add the tea bags and let steep for 30 minutes. After the 30 minutes, remove the tea bags and add the sugar, stirring until it is all dissolved. Add the strawberry juice. Transfer to a pitcher and chill in the fridge until cold. Server over ice.
Serving size: 1 Cup

Two Kids Cooking: Melon Pops

In the July heat, cool and juicy melon is always tasty. This week Alex & Soph share one way we like to add a little pizazz to our melon by demonstrating how we make Melon Pops.

Our inspiration for this recipe came from: FamilyFun Magazine Whenever we’re feeling less than creative, this magazine is great for generating ideas that are family-friendly and fun. We usually throw in our own spin, but making a recipe your own is part of the joy of cooking, right?

We hope this recipe inspires you to create variations that your family will enjoy–from using a different melon, or smaller cookie cutters–get creative and enjoy the show!

Two Kids Cooking TV: Personal Patriot Trifles

Happy 4th of July everyone! The 4th is my second favorite holiday (after Halloween), so we have fun each year coming up with food that matches the holiday . This year, the kids will be with their dad for the official day, but that hasn’t stopped us from whipping up lots of red, white and blue foods, grilling and generally just being patriotic. For our 2011 4th of July episode, we’re sharing one of our red, white and blue treats: Personal Patriot Trifles.

With this recipe, you can customize the level of cooking action you want to occur. You can go full out ‘from scratch’ or use already prepared ingredients. However involved you get, though, the end result is a delicious, berry-filled dessert that beautifully displays its patriot colors.

For our cupcakes, we used this recipe: Simple White Cake. You could, however, as previously mentioned, use pre-made white cupcakes, or a mix. The same goes for the whip cream—canned, in a tub, or made from scratch—whatever works best for you. Then, all that’s left is assembly and consumption!

Personal Patriot Trifles:
6 white cupcakes
Strawberries
Blueberries
Whip Cream

First prepare your cupcakes from your mix or recipe. While the cupcakes are baking, wash your berries and slice up the strawberries.

Once the cupcakes have cooled, cut them into three equal parts. Place the first layer on the bottom of a personal sized dessert dish. Add a layer of whip cream, then a layer of strawberries. Next, add the middle section of the cupcake, topped it with more whip cream and a layer of blueberries. Finally, add the top of the cupcake, more whip cream and decorate with blueberries and strawberries as desired. Six cupcakes make 6 servings, so if you have more cupcakes, you can certainly make more :D
