The Kids Cook Monday: Pan Fried Walleye

With fishing opener coming up here in Minnesota, we thought we’d re-share our Pan Fried Walleye recipe for this week’s The Kids Cook Monday. Walleye is the state fish of Minnesota, plus it’s super tasty!

Fishing is one of the kids many favorite summertime activities. It is a wonderful way to spend a beautiful summer afternoon together, as a family. The kiddies and I do go fishing from time to time, but most of their fishing adventures are with their Dad. They’ve both called me from the boat in the middle of a lake, wired with excitement after catching a ‘super big’ walleye, perch, sunny or whatever fish it might be. Then, after the fun of catching ‘em, they bring them back to their cabin and fry ‘em up (if I’m lucky, their dad will send some fish back home with them on our weeks so I get some too :D ).

This is one of those easy to cook with kids recipes that the family can make together, so it’s perfect for ‘The Kids Cook Monday’. And, if your family is if the fishing persuasion, we hope you get out on the water and catch a supper or two as well!

The Kids Cook Monday: Deviled Eggs

Yeah, we know, everyone knows how to make deviled eggs…so why not do it with the kids with all those multi-colored Easter eggs?! Alex, Soph and I love Easter, the kids especially enjoy the egg decorating and the fact is, egg decorating leads to hard-boiled egg eating. Since I like a hard-boiled egg for breakfast now and again, it’s fine most of the time, but at Easter, we are left with DOZENS.

I always like to get the kids involved with resource overage issues–a.k.a. too many hard-boiled eggs–and one idea that comes up every year is—–yes, deviled eggs.

Anyway, we hope you have just as much fun eating the beautifully colored, hard-boiled eggs as you had decorating them….and if you need a recipe to make them, let’s say—devilish–here’s the one we demonstrate in this weeks ‘The Kids Cook Monday:D

Deviled Eggs:
6 Eggs, hard-cooked
3 to 4 Tbsp Mayonnaise
2 Tbsp Dill Pickle Juice <–secret ingredient ;)
1/2 to 1 tsp Dijon Mustard
1/8 tsp salt
Pepper to taste
Paprika

Instructions:
The first thing you have to do is hard-cook your eggs. (And, for perfect hard-cooked eggs, I recommend checking out ‘Simple Hard Cooked Eggs ‘ from Good (&CHEAP) Eats). Once your eggs are cooled and ready, peel the shells off and cut them in half, taking the yolks out and placing them in a bowl. Put all of the halved whites on a plate and set them aside.

Next, mash up the yolks with a fork. Once they are crumbly, add the rest of the ingredients, except that paprika, and continue mashing and stirring until the mixture is creamy. Once the yolks are ready, place teaspoons full into the holes in the egg whites, dividing it up as evenly as you can amongst the eggs. Finally, garnish them with a sprinkling of paprika and they are ready to serve.

The Kids Cook Monday: Cheesy Eggs

Today for ‘The Kids Cook Monday’ we’re sharing one of our earliest episodes and a recipe we whip up regularly. Soph was 6 yrs old in the show, and now at almost 8 she’s even more active in helping flip our omelety creation.

Following is our recipe…it’s great for breakfast or breakfast for supper:

Cheesy Eggs

2 Eggs, beaten
1/4 (or more to taste) Cheese – we like camouflage cheese (aka marble jack)
butter
Salt and pepper to taste

First, Crack the eggs into a bowl and beat with a whisk. Add the salt and pepper to taste.

Heat up a frying pan and melt enough butter to coat the bottom so the eggs don’t stick. Then, pour the egg mixture into the pan.

Once the egg has firmed up enough to slide a spatula underneath, flip it over. Immediately add the cheese to one half of ‘egg circle’ and flip the other half over the cheese. Let the cheese melt for about 30 seconds, then flip it over one more time. Let it sit in the pan another 30 seconds or so. Once the cheese has melted to your preferred state of gooey-ness, it’s ready for eating…well, after moving it to a plate :D

The Kids Cook Monday: Pizzadillas

It’s Monday! and that means it’s time for ‘The Kids Cook Monday!’ This week we’re resharing our recipe for Pizzadillas–essentially they’re quesadilla’s with pizza ‘stuff’ inside. We love this recipe because it allows each of us to customize ingredients and it’s lots of fun…not to mention we love pizza of all kinds :D

Our recipe is below and in the episode, Alex and Soph show you exactly how they make their own specialty Pizzadillas.

Pizzadillas

Main Ingredients:
Flour Tortillas
Cheese – Mozzarella, Cheddar, a Marbled variety, whatever you prefer
Pizza Sauce for dipping
Cooking Spray

Optional Ingredients:
Pepperoni
Sausage
Chicken
Olives, black and/or green
Artichoke hearts
Onions
Whatever you like on your pizza

Instructions:
The first thing you’ll want to do is prep the ingredients. Have the kids help grate the cheese, slice the olives, cut up the chicken, etc… Once you’ve got all your ‘toppings’ ready, give everyone a tortillas and have them start building their pizzas. Be carefull not to overtop or it will be hard to flip when the pizzadilla is in the pan. Once each person is satisfied with the contents of their pizzadilla, have them add the second tortilla to the top and you’re ready to melt it up.

Heat a pan on the stove top until it’s hot and then spray it with cooking spray. Next, drop in your first pizzadilla, cooking it ’til the first side is browned. Then, spray the side facing up and flip the pizzadilla over–Sophia (age 7) likes to help with the spraying part and Alex (age 12) and I usually take care of the flipping. After both sides are browned and the cheese has melted, lift it out of the pan and let it cool on a plate. Finally, it’s time for cutting! We usually cut ours into either 4 or 6 pieces.

Once your pizzadilla is cut to your satisfaction, serve with a side of microwave-warmed pizza sauce and you’ve got yourself a quick, easy and tasty meal!

The Kids Cook Monday – Check ‘Em Out!

We’ve been participating in the ‘The Kids Cook Monday‘ initiative for about a year now, so you’ve probably seen our posts about ‘em, or at least have a vague recollection of us mentioning them before; But, guess what? They have officially launched their awesome website! It’s filled with great resources to help families get in the kitchen together and have some fun.

What exactly is The Kids Cook Monday? Well, it’s an initiative that encourages families to keep-up or start a tradition of family dinners. When Monday is family dinner night, the meal becomes a fun event, ensuring that parents and kids spend quality time together every week, all year round.

You don’t have to be an expert cook to make a family meal together either–Parents can explore cooking with kids even if they’re novice cooks! The Kids Cook Monday website is filled with recipes that come with age group suggestions as well as “parent”, “kid’ and “together” cooking tasks. There’s also an information packed toolkit to help get your family started.

Studies show that children who engage in regular family dinners eat more nutritious diets, get better grades in school and develop better communication skills, so how can the modern family incorporate a regular, family mealtime? Alex, Sophia and I, along with ‘The Kids Cook Monday’ and the other organizations and bloggers on board are here to help your family answer that question. The Kids Cook Monday: Snickety Snacks

Snickety Snacks are easy, healthy and involve no oven or stove for preparation. This easy to cook with kids recipe is perfect for after-school snacks or for munching on while recovering from playing outside.

The Kids Cook Monday: Tuna Burgers

Burgers are awesome. Alex, Soph and I are burger people…well mostly Alex and me, but Soph does eat burgers most of the time. We like Hamburgers, Turkey Burgers and our featured burger of this week, Tuna Burgers. Not only are they high in protein and low in fat, they’re a great meal to make as a family…throw the ingredients into a bowl, squish together (kids love squishing things!)…form patties, fry ‘em up and all you’ve got left is to eat!

The Kids Cook Monday: Fruit Kabobs

Being from Minnesota and people who regularly attend our State Fair, food-on-a-stick is not an unusual thing for Alex, Soph and me. BUT, most of the stick-food we see isn’t quite so healthy as our Fruit-on-a-Stick a.k.a. Fruit Kabobs. In this episode that we originally shared last year, Alex and Sophia show the simplicity involved in making a healthy snack-on-a-stick.

The Kids Cook Monday: Beef Jerky

For this week's 'The Kids Cook Monday,' we're re-sharing our Beef Jerky episode to demonstrate just how easy it is to whip up a batch of your own. We use our dehydrator to make ours, but you could easily make the jerky in your oven on a low temp. The recipe we followed is from Cooks.com.
