The Kids Cook Monday: Deviled Eggs

Yeah, we know, everyone knows how to make deviled eggs…so why not do it with the kids with all those multi-colored Easter eggs?! Alex, Soph and I love Easter, the kids especially enjoy the egg decorating and the fact is, egg decorating leads to hard-boiled egg eating. Since I like a hard-boiled egg for breakfast now and again, it’s fine most of the time, but at Easter, we are left with DOZENS.

I always like to get the kids involved with resource overage issues–a.k.a. too many hard-boiled eggs–and one idea that comes up every year is—–yes, deviled eggs.

Anyway, we hope you have just as much fun eating the beautifully colored, hard-boiled eggs as you had decorating them….and if you need a recipe to make them, let’s say—devilish–here’s the one we demonstrate in this weeks ‘The Kids Cook Monday:D

Deviled Eggs:
6 Eggs, hard-cooked
3 to 4 Tbsp Mayonnaise
2 Tbsp Dill Pickle Juice <–secret ingredient ;)
1/2 to 1 tsp Dijon Mustard
1/8 tsp salt
Pepper to taste
Paprika

Instructions:
The first thing you have to do is hard-cook your eggs. (And, for perfect hard-cooked eggs, I recommend checking out ‘Simple Hard Cooked Eggs ‘ from Good (&CHEAP) Eats). Once your eggs are cooled and ready, peel the shells off and cut them in half, taking the yolks out and placing them in a bowl. Put all of the halved whites on a plate and set them aside.

Next, mash up the yolks with a fork. Once they are crumbly, add the rest of the ingredients, except that paprika, and continue mashing and stirring until the mixture is creamy. Once the yolks are ready, place teaspoons full into the holes in the egg whites, dividing it up as evenly as you can amongst the eggs. Finally, garnish them with a sprinkling of paprika and they are ready to serve.

Two Kids Cooking TV: Deviled Eggs

Everybody knows that Easter is the time of year that families come together over hard-cooked eggs and get creative with dyes, stickers, shrinking sleeves and whatever else you can think of to make an egg pretty.

I thought this year we’d get by with just 18 eggs to decorate, but as Sophia reached for the 18th egg to dip in vinegary dye, she asked, ‘Mom, where are the rest of the eggs?’

Since I’m a Mom who loves encouraging creativity in my children, I promptly grabbed the back-up 18 pack of eggs in the fridge and boiled ‘em up.

So, when a family of three has 36, brightly-colored, hard-cooked eggs, they make a few deviled eggs–at least the 2 kids family does :D Today, Alex and Sophia demonstrate just how we make our secret ingredient deviled eggs.

Recipe of the Week: Two Kids Deviled Eggs

Deviled eggs are pretty much a standard after Easter treat…I mean, all those hard-cooked eggs can’t go to waste, right? The nice thing about Deviled Eggs, besides their tastiness, is that they are one of those recipes to cook with kids that are quick, easy and fun–plus, our recipe has a secret ingredient sure to add some extra punch.

Deviled Eggs:
6 Eggs, hard-cooked
